How To Make A Roux
Ingredients:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1ΒΌ cups milk, heated
- Freshly ground pepper, and salt to taste
Directions:
1. In a heavy-bottomed saucepan, melt the butter over medium heat.
2. Stir in the flour and cook, stirring constantly, until the mixture forms a paste
and starts to bubble slightly. Be careful not to let it brown, which should take
about 2 minutes.
3. Gradually pour in the heated milk while continuing to stir the sauce. This will
help it thicken.
4. Increase the heat and bring the sauce to a boil. Season with salt and freshly
ground pepper to taste.
5. Reduce the heat to low and let the sauce cook for an additional 2 to 3
minutes, stirring occasionally.
6. Remove the saucepan from the heat. If you're not using the sauce
immediately, you can prevent a skin from forming by covering it with wax
paper or pouring a thin layer of milk over it.
