How to Sweat Shallots
When it comes to sweating shallots or onions, one needs to focus
on the aromatic vegetable foundation of a recipe. This technique
involves initiating the cooking process for these veggies before
introducing other ingredients. The objective is to gently soften the
vegetables without inducing browning, allowing their flavors to
intermingle and develop harmoniously.
Sweating shares similarities with sautéing, as it typically takes
place in a pan on the stovetop using a modest amount of oil.
However, there are a few key distinctions. When sweating
vegetables, it's important to use medium heat and avoid
allowing the veggies to brown. Instead, keep a watchful eye for
a subtle glistening effect and observe as the edges of the
vegetables gradually soften. Once this stage is reached, you
can confidently proceed to the subsequent step in the recipe.
